1 clove garlic
1 bag of baby spinach or broccoli
1/2 tablespoon olive oil
1 teaspoon olive oil {for your garlic and spinach/broccoli}
2 tablespoon cream cheese with chives and onions {it is in a plastic tub at the grocery store}
2 boneless/skinless chicken breasts
1. Preheat oven to 375 degrees.
2. Pound chicken to one-half to three-quarters of an inch tick {tip: If you don't have a tenderizer, put the chicken in a plastic bag and use a hammer or a canned food item}.
3. Season chicken with salt and paper.
4. Spread a tablespoon of cream cheese onto each chicken breast, roll up and secure with a toothpick or fold like a taco.
5. Heat 1/2 tablespoon of olive oil in a pan and sear chicken on each side until light golden brown {approx. 5 minutes}.
6. Transfer seared chicken to an ungreased baking dish.
7. Bake chicken for 20-25 minutes or until done.
8. Take the pan you seared the chicken in and add 1 tsp olive oil, garlic clove and spinach/broccoli until spinach is slightly wilted and turns bright green or the broccoli is tender.

this tasted really good!!! of course, i have no idea how to pound the meat and make it even so it wasnt pretty when i did it!! :) but it was yummy!!
This recipe was so yummy! I had some left over chive & onion cream cheese that I know would just sit in my fridge and never get used again. So, I took the remaining cream cheese that was in the tub and put it in a small sauce pan. Through some chicken broth and a large heaping spoonful of sour cream, heated it......and WaaLaa! I made an awesome saucy gravy to pour over the top of the chicken. It was UBER GOOD!
I made this for the second time and it was so delisioso! The only problem I have is.....how do I make the chicken look pretty after I've smashed it flat? This dish is so good, but my chicken falls apart and won't hold together. Any suggestions?
