Buffalo Hot Wings



Perfect For Superbowl!!

These taste just like Pizza Hut's traditional hot wings. So, instead of forking out $20.00 for 20 hot wings, just whip up your own in 15 minutes flat and they only cost about $5.00.

Chicken wings, thawed
white vinegar
Franks Hot Sauce
butter, melted
cayenne (depends on how hot you want it)
Vegetable Oil

Defrost your chicken wings and pat them dry (you don't want to drop "wet" wings into hot oil). Heat oil to 400 degrees in a deep fryer or deep pan, and cook wings for about 12 to 15 minutes. While wings are cooking, make your sauce, which is the vinegar, Franks hot sauce, and butter. You can add cayenne if Franks hot sauce isn't hot enough for you. I didn't really use any measurements. I just through ingredients together and kept "finger-licking" taste testing it until I thought it was perfect.

Remove wings from oil and smother in sauce. Let them cool for a few minutes....that oil was HOT! Grab some napkins, because these babies get really messy, and they are finger lickin' good!

Rosemary Skewered Chicken with Orange Glaze

This recipe was on the Biggest Loser tonight and I thought it looked so good. It showed them making it and it was really simple....I am going to try it VERY soon....

-Juice of 3 oranges
-1 Tablespoon Dijon Mustard
-1 Tablespoon Honey
-2 Garlic Cloves, chopped
-1 Tablespoon finely chopped peeled fresh ginger
-4 boneless, skinless chicken breasts, cut into 1 inch cubes
-6 Sprigs of Rosemary about 10-12 inches long, with half of the leaves removed

-Preheat a grill or grill pan on medium heat
-Place the orange juice into a small saucepan and cook over medium heat until the orange juice is the consistency of a very thin soup
-Add the dijon, honey, garlic, and ginger and continue cooking over medium heat for 2-3 minutes
-Remove from heat to allow flavors to meld and reserve
-Evenly divide the cubed chicken among the rosemary sprigs (they had 5 cubes per sprig) and skewer the chicken onto the exposed part of the rosemary sprigs
-Lightly brush the grill with oil and grill chicken for 1-2 minutes on each side or until internal temp reaches 165 F
-Remove skewers from grill, drizzle with orange sauce and serve immediately

The whole point of this recipe was to give a healthy alternative to chicken wings for the super bowl parties that are right around the corner....I think I might try them then.....

Cola Pot Roast

3-4 lb pot roast
10 3/4 oz can cream of mushroom soup
1 envelope dry onion soup mix
16 oz bottle of Coke, Pepsi or other cola

1. Pace meat in slow cooker.
2. Top with mushroom soup and onion soup mix. Pour in cola.
3. Cover and cook on High for 6 hours. (I cooked mine on low for 9 hours)

I took the extra sauce from this and put in a pan with some corn starch to thicken it for gravy and then put the gravy on mashed potatoes. It was really good.

Beef, Tomatoes, and Noodles

1 1/2 lbs stewing beef, cubed
1/4 c flour
2 c stewed tomatoes(if you like tomato chunks) OR 2 c crushed tomatoes (for smoother sauce)
1 tsp salt
1/4 to 1/2 tsp pepper
1 medium onion, chopped
water
12 oz bag noodles

1. Combine meat and flour until cubes are coated. Place in slow cooker.
2. Add tomatoes, salt, pepper and onion. Add enough water to cover.
3. Cover and simmer on low 6-8 hours.
4. Serve over cooked noodles.

I haven't eaten this yet but its in my crock pot now and smells GREAT!!!

I'm Bored!

Does anyone have any good recipes that are low carb? My husband is on a protein diet kick and most of the recipes that I want to use have lots of carbs. Cooking for my hubby for the last week or two has been quite boring, because all he wants is plain chicken or a good ol' plain hamburger. So, if anyone has some fun low carb recipes, please help me out! Thanks

Hearty Chicken Chowder




Soup:
2 to 3 chicken breasts
6 medium potatoes
1 package of bacon
2 to 3 stalks celery
2 large carrots
1 small onion
2 tsp. salt
1/8 to 1/4 tsp. pepper

Roux:
6 cups milk (whole or 2%)
3/4 cup flour
6 Tbs. butter

1. Boil chicken in a large pot of water for about 10 to 15 minutes.
2. While chicken is boiling, cook your bacon and chop your potatoes(peeled or unpeeled is fine) and veggies (peel your carrots).
3. Pull chicken out of water and add your potatoes and veggies to the same pot of water. Boil your potatoes & veggies for about 10 minutes or until softened.
4. While your potatoes & veggies boil, chop up your chicken and bacon, then set aside.
5. Drain potatoes & veggies, and in the same pot start your roux. Melt your butter and then add flour. Stir until thick and smooth. Slowly add your milk until it's nice and creamy.
6. Add your salt & pepper, chicken & bacon, potatoes & veggies. Heat until warm and serve.

This is an old family recipe from my husbands side of the family. I did tweak it a little and kind of added some of my own things.....and it's a big hit with everybody. It's very filling and it's really great during these cold winter days.

Blizard Blitz Party Mix


2 cups - cereal squares such as Chex {oven toasted}
2 cups - pretzel twists {small}
1 cup - peanuts {dry roasted}
1 cup - coarsely chopped caramels about 20 {freeze first for easier chopping}
2 cups - white chocolate chips {1 package or 12 oz}

1. Mist 9x13 baking pan with nonstick cooking spray.
2. In large bowl combine cereal, pretzels, peanuts and caramels.
3. Melt white chocolate chips.
4. Pour white chocolate over cereal mixture and toss to coat.
5. Let cool just slightly.
6. Spread mixture into the prepared baking pan with your hands and let it stand for 20 to 30 minutes, or until firm.
7. Break into bite size pieces.

Chicken Tetrazzini

I found this recipe in a magazine and ripped it out a long time ago. Well, I found it so I decided to try it....It turned out to be really yummy and my whole family ate it really good!!! It was really easy too....

-1/4 cup butter
-1/4 cup flour
-1/2 teaspoon salt
-1/4 teaspoon pepper
-1 cup chicken broth
-1 pkg spaghetti / cooked and drained
-2 cups cubed chicken or turkey (I just used a can of chicken. One of the larger sized ones)
-1 can sliced mushrooms / drained
-1/2 cup grated parmesan cheese
-1 cup whipping cream

Melt butter in large saucepan over low heat, add flour and stir until mixture is smooth and bubbly. Remove from heat, stir in salt, pepper, broth, and cream. Heat to boiling, stirring constantly. Boil and stir for one minute. Stir in spaghetti, chicken, and mushrooms. Pour into an ungreased 2 qt casserole dish. Sprinkle with cheese. Bake uncovered at 350 for 30 minutes or until bubbly!!!!

Hot & Spicy Joes



1 lb. hamburger
1 medium onion, chopped

Sauce:

1 c. ketchup
2 Tbs. brown sugar
2 Tbs. worchestershire sauce
1 tsp. vinegar
2 tsp. mustard
2 tsp. chili powder
1 tsp. liquid smoke
1/2 tsp. cayenne pepper (sometimes less is more, depending on your palette)

Brown hamburger and onion; set aside. Combine sauce ingredients; add hamburger and onion and simmer for 5 minutes. Put on a hamburger bun and top with your favorite cheese.

**I like to spread some butter on the inside of the buns and then toast them in my oven. It gives the buns a little crisp and the butter just makes it super yummy!

**These joes are really great for your hungry men during the superbowl too!

California Chicken Salad Tacos


3/4 cup Pace Picante Sauce {not hot sauce but picante sauce be sure to select your hotness}
2 tablespoon lime juice
1/2 teaspoon chili powder
2 cups cooked chicken {cut in strips}
3 cups shredded lettuce
12 flour tortillas {8 inch}
1 medium tomato, chopped
1 cup shredded cheddar cheese

1. Mix Picante Sauce, lime juice and chili powder in large bowl.
2. Add chicken.
3. Spoon chicken mixture in the center of tortilla.
4. Top with cheese, lettuce, tomato and additional picante sauce if wanted.

This makes about 12 tacos.
Prep time: 20 minutes.

Easy Gourmet Chicken Dinner

1 clove garlic
1 bag of baby spinach or broccoli
1/2 tablespoon olive oil
1 teaspoon olive oil {for your garlic and spinach/broccoli}
2 tablespoon cream cheese with chives and onions {it is in a plastic tub at the grocery store}
2 boneless/skinless chicken breasts

1. Preheat oven to 375 degrees.
2. Pound chicken to one-half to three-quarters of an inch tick {tip: If you don't have a tenderizer, put the chicken in a plastic bag and use a hammer or a canned food item}.
3. Season chicken with salt and paper.
4. Spread a tablespoon of cream cheese onto each chicken breast, roll up and secure with a toothpick or fold like a taco.
5. Heat 1/2 tablespoon of olive oil in a pan and sear chicken on each side until light golden brown {approx. 5 minutes}.
6. Transfer seared chicken to an ungreased baking dish.
7. Bake chicken for 20-25 minutes or until done.
8. Take the pan you seared the chicken in and add 1 tsp olive oil, garlic clove and spinach/broccoli until spinach is slightly wilted and turns bright green or the broccoli is tender.
