Meatball Recipe

1 1/2 -2 lbs. ground beef
1 lb. ground pork
1/2 cup ketchup
2 tsp. worchest. sauce
1/2 tsp. salt/pepper
1 c. filler - bread crumbs or approx. 28 crushed saltines
1 Tbl. grey poupon or mustard

Combine all and roll into balls (use cookie scoop).
Then bake at 350 for 30 min.

Sauce:
1 1/2 cup ketchup
1/2 cup water
2 Tbl. vinegar
4 Tbl. brown sugar
2 tsp. salt/pepper
2 Tbl. onion or onion salt/powder
1 Tbl. worchest. sauce

Combine in crockpot.
Add meatballs & simmer on high for 2 hours

Cheesy Meat Loaf

17 round cheese crackers
1 sm. onion, finely chopped
2 tbsp. green pepper, minced
1/4 c. chili sauce
1/2 c. milk
2 eggs, slightly beaten
3/4 tsp. salt
1/8 tsp. pepper
11/2 lb. lean ground beef

Crush crackers with rolling pin or blender until crumbled. In mixing bowl, combine crumbs with onion, green pepper, chili sauce, milk, eggs, salt, and pepper. Mix in ground beef. Form into 6 or 7 inch round loaf. Place in slow-cooking pot. Cover and cook on low for 6 to 8 hours or until done.

Crock Pot Pizza Casserole

Crock Pot Pizza Casserole

1 lb Ground beef
1.5 jar (14 oz) pizza sauce
1 jar (23 oz) spaghetti sauce
1 pkg (12 oz) noodles {I choose a Penne noodle}
4 oz Cheese, mozzarella
4 oz Cheese, cheddar
1 small can Mushrooms
1 small can sliced olives
1 Onion, diced
1 Green Pepper, diced
1 pkg Pepperoni

Directions
1. Brown hamburger and onion. Drain grease.
2. Cook Noodles while browning hamburger.
3. Add sauces to meat and onion mixture.
4. In crock pot add mushrooms, olives, and green pepper.
5. Spoon meat mixture into crock pot and mix all together.
6. Put in as much Pepperoni and cheese as you would like.

Cook on Low for one hour, I wouldn't cook longer than two hours. I do have to tell you when I made this, the sauce mixture did not go far - so I increased the amounts on this recipe. It is possible even with the increase it could still be a little dry, just use your best judgment on the sauce. Additionally, I would imagine you could turn this into a half day crock pot recipe, with the hamburger being cooked in the crock pot. Overall, this was actually pretty yummy and I was sceptical!

Semi-Homemade Hungry Jack Casserole



Preheat oven to 350 degrees

1 lb. hamburger, browned
1 Tbs. brown sugar
1 tsp. vinegar
1/2 medium onion, chopped
2 cans pork & beans (I've also used canned baked beans before and they work great)
1 pkg. Pillsbury refrigerator biscuits
Shredded cheese


Brown hamburger; add brown sugar, vinegar, and chopped onion. Mix in pork & beans and spread out into a casserole dish. Cut biscuits in halves and lay across the top. Cover with shredded cheese. Bake for 30 minutes.

Shipwreck Stew



This isn't the prettiest looking meal, but what do you expect when it's called Shipwreck Stew. This is so yummy and super easy!

1 lb. hamburger, browned
4-5 potatoes, cut in French fry-like strips
1 medium onion, chopped
1 can red kidney beans, drained
1/4 to 1/2 lb. velveeta cheese, depending on how cheesy you want it
1 can tomato soup
1 1/2 tsp. salt
1/4 tsp. pepper
1/4 cup butter

*Layer in crock pot in this order: hamburger, potatoes, kidney beans, and cheese. Pour soup over the top. Season with salt and petter. Dot with butter.
*Cover. Cook on Low 6-8 hours.
*I like to sprinkle some Parmesan cheese over the top of it, when at the table.

Confetti Beef Skillet


*1/2 lb. extra lean ground beef (I used 1 pound)
*1 medium yellow onion, chopped
*1 env. italian dressing Mix
*1 medium zucchini, thinly sliced
*1 can (14-1/2 oz.) Italian-style diced tomatoes, undrained
*1 pkg. (10 oz.) frozen corn, thawed
*1 cup water
*1-1/4 cups instant brown rice, uncooked
*1/2 cup shredded mozzarella cheese


Brown meat in large nonstick skillet on medium-high heat; drain. Add onion; cook and stir until tender. Stir in dressing mix. Reduce heat to medium-low. Add zucchini, tomatoes and corn; mix lightly. Cover; simmer 5 minutes.

Stir in water. Bring to boil on medium-high heat. Stir in rice; cover. Reduce heat to medium-low; cook 5 minutes. Remove from heat; stir. Cover and let stand 5 minutes. Fluff with fork.

Sprinkle with cheese; cover. Let stand 5 minutes or until cheese is melted.

I found this on kraftfoods.com It had a really good flavor to it. However--if you dont like hamburger (like me) its almost impossible to pick around it in this recipe. Next time I will make meatballs to put in this because I really like how the veggies and tiny rice pieces (that I could sort out) tasted!! :)

Easy Lasagna Toss

1 lb. lean ground beef
2 cups chopped green peppers (about 2 peppers)
3 cloves garlic, finely chopped
1 jar (26 oz.) spaghetti sauce
1-2/3 cups water
1/4 cup zesty italian dressing
12 oven-ready lasagna noodles, broken into quarters
1 cup shredded mozzarella cheese


Brown meat in large (4-qt.) saucepan on medium heat; drain.

Add peppers, garlic, spaghetti sauce, water and dressing; bring to boil. Stir in noodles; reduce heat to medium-low. Cover.

Cook, stirring occasionally, 10 to 15 min. or until noodles are tender. Remove from heat. Sprinkle with cheese. Cover; let stand 5 min. or until cheese is melted.

This was so easy to make and tasted great.

Hot & Spicy Joes



1 lb. hamburger
1 medium onion, chopped

Sauce:

1 c. ketchup
2 Tbs. brown sugar
2 Tbs. worchestershire sauce
1 tsp. vinegar
2 tsp. mustard
2 tsp. chili powder
1 tsp. liquid smoke
1/2 tsp. cayenne pepper (sometimes less is more, depending on your palette)

Brown hamburger and onion; set aside. Combine sauce ingredients; add hamburger and onion and simmer for 5 minutes. Put on a hamburger bun and top with your favorite cheese.

**I like to spread some butter on the inside of the buns and then toast them in my oven. It gives the buns a little crisp and the butter just makes it super yummy!

**These joes are really great for your hungry men during the superbowl too!

Spooky Eyeball Tacos



*1 lb. ground beef
*1 pkg. (1-1/4 oz.) Taco Seasoning Mix
*12 Taco Shells
*3/4 cup Salsa
*3/4 cup Sour Cream
*1 can (2-1/4 oz.) sliced pitted ripe olives



1. Mix meat and seasoning mix. Shape into 36 (1-inch) balls; place in 15x10x1-inch baking pan.
2. Bake at 350°F for 15 to 20 minutes or until cooked through. Fill each taco shell with 1 meatball; drizzle with salsa. Top with 2 meatballs dipped in sour cream. Garnish with olives to make "eyeballs."

These were SO EASY and so fun!!!

Stuffed Bell Peppers

1 lb ground hamburger
1/4 c. chopped onion
1 1/2 c. cooked minute rice
16 oz stewed or diced tomatoes
salt & pepper to your taste
1c. or so (sometimes I like more) Velveeta cheese
4 bell peppers (I like to use one of each color, green, red, orange and yellow) washed, decored (is that a word?) & cut in half
White cheese of your choice (Swiss, Mozzarella, Monterey Jack, etc.)

Brown meat and onion. Combine the rest ingredients then add Velveeta in chunks. Don't melt all the way. Fill peppers and place in a glass baking dish. Cover with foil and bake at 350 for 1 hour. Remove the foil the last 10 minutes. Put 1/2 a slice of swiss or some other sliced cheese on the peppers for the last few min. (I put both halves on because I like cheese!!)

A.1 Meatloaf



*1 can (8 oz.) tomato sauce, divided
*2 lb. ground beef
*1 onion, chopped
*1 cup fresh bread crumbs
*1/3 cup A.1. Original Steak Sauce
*2 eggs, beaten
*1/2 tsp. ground black pepper

*Special Extra:
Add 1 small green pepper, chopped, to the meat mixture.

1. Heat oven to 350°F. Reserve 1/2 of tomato sauce; mix all remaining ingredients.
2. Press into 9x5-inch loaf pan.
3. Bake 50 min.; pour off fat. Top with reserved sauce; bake 10 min. or until meatloaf is cooked through (160ºF).

I did not eat this but my family did and if my son loved it--it MUST be good!!
And it was super easy!! :)

Tater.Topped.Casserole


  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 1 can (10 3/4 oz.) condensed cream of mushroom soup
  • 1/4 cup milk
  • 1 cup frozen mixed vegetables
  • 1 cup shredded cheddar cheese
  • 1 lb (1/2 of 32 oz. pkg.) frozen bite-size tater tots.

  1. Heat oven to 375 degrees.
  2. Brown meat with onions in skillet, stirring occasionally; drain.
  3. Spoon into 8 inch square baking dish.
  4. Mix soup and milk; pour over meat mixture.
  5. Top with layers of mixed vegetables, cheese and potatoes.
  6. Bake 45 min. or until potatoes are golden brown and casserole is heated through.
